If you’re like me and have a GNARLY sweet tooth, you will be likely be extremely tempted by desserts. The trick of course, to stay on track with your diet, is to get CREATIVE in the kitchen! I mix my protein powder with just about ANYTHING to make a yummy dessert… and it does the trick! Try this simple recipe, which is under 200 calories (depending on the toppings and extras). I can eat this without the graham cracker or jelly/fruit and still be satisfied by its yummy goodness! =D

Berrylicious Microwave Minute Muffin
Take a little less than a quarter cup of quick oats, 1 egg, a small handful of blueberries, and some brown sugar or Stevia if you like things sweet, and mix it all up in a coffee mug. If you want your muffin a little moist a tablespoon of plain soymilk or almond milk will do it.
Then place in the microwave for 1 min. Watch it carefully! This could overflow!
If the muffin top does not look firm, place back in 30 sec at a time.
Once ready, flip mug upside down onto a plate and slice some fresh strawberries to decorate.

Moist, Low-Calorie Microwave Protein Fudge Muffins
Ingredients:
- 2 Egg whites (**If using liquid egg whites use 1/2 cup and add 20 calories)
- 1/4 cup pumpkin (3 T applesauce or other starchy carb works well too!)
- 2 T coconut flour* (1 T also works, and results in 40 fewer calories)
- 1/2 tsp baking powder
- stevia or other granular sweetener to taste
- 1 T. cocoa powder (Hershey’s Special dark cocoa is best!)
Directions:
Spray a soup bowl with a very light layer of oil to prevent sticking (not even necessary but makes cleaning up a bit easier). Mix ingredients well with fork, whisk or spatula. Microwave for 2:30-4+ min on High (depends on your microwave, altitude and the whim of the cupcake gods.)Makes one HUGE serving. 155 calories **; 12 g protein; 16.5g carb; 4.5g fiber; 1.75g fat Stellar stats.Found this recipe via Pinterest!

CLEAN EATING CHOCOLATE BROWNIES
INGREDIENTS
- 1/2 cup Oatmeal
- 3 tbsp Coconut Oil (preferably Organic)
- 1/2 cup Stevia
- 1/3 cup Plain, Nonfat Greek Yogurt
- 1 tsp Vanilla Extract
- 1/4 cup Unsweetened Baking Cocoa
- 1/4 cup Chocolate protein powder (preferably casein)
- 1 Egg and 1 White
- 1/3 cup Dark Chocolate Chips or Nuts (optional)
DIRECTIONS
1. Mix dry ingredients together
2. Mix wet ingredients together
3. Combine everything together
4. Put in 8 X 9 pan
5. Heat Oven at 350 for about 20 minutes.
6. These can be stored in the freezer if you cannot eat all at once or want to space out eating proportions.Making these today!

I never liked spinach until I made an adventurous decision to buy some at the grocery store anyways… and turn them into Oven Baked Spinach Chips.
Now, spinach is my new best veggie friend. It tastes sooo ridiculously good. Let’s start baking!
Ingredients
• Bucket load of spinach leafs. I am talking about handfuls here!
• A bit of extra virgin olive oil, to coat the leaves. You don’t need a lot - for 400 grams of spinach leaves, I used 1 tablespoon of oil.
• Herbs. I used pepper, curry powder, red pepper powder, garlic powder and thyme.
Directions
1. Preheat oven at 120°C / 250F,
2. Rinse and dry the spinach leafs,
3. Place spinach in a large bowl, pour in some olive oil to coat the leafs,
4. Add herbs, toss it all around,
5. Place some baking paper on a tray, and lay out the spinach nice and evenly,
6. Pop them in the oven for 15-20 minutes. Keep checking on them until they’re crisp!
I could eat buckets of this stuff. Yum! Enjoy your crispy veggies. :)o my.. doesn’t this look interesting?
